  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface. Transfer it to the prepared baking sheet and prick the center with a fork, leaving a 1-inch border around the edges.
  3. In a small bowl, mix the ricotta cheese, chopped basil, thyme, minced garlic, salt, and pepper until well combined.
  4. Spread the herbed ricotta mixture evenly over the puff pastry, staying within the border. Arrange the halved cherry tomatoes on top, pressing them lightly into the ricotta. Drizzle with olive oil.
  5. Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and crisp.
  6. Remove the tart from the oven and let it cool slightly. Drizzle with balsamic glaze and honey if desired. Slice and serve warm or at room temperature.

Notes

Use fresh herbs for a burst of flavor. Pricking the puff pastry and leaving a border helps keep the crust crispy. Customize toppings with sliced olives, capers, or crumbled feta for extra flavor. The herbed ricotta mixture can be prepared a day ahead and stored in the refrigerator.
