Ingredients
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons fresh basil, chopped (optional garnish)

Method

Instructions
  1. Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.
  2. In a large bowl, season the chicken pieces with Italian seasoning, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  3. Spread the seasoned chicken evenly in the prepared baking dish. Pour the marinara sauce over the chicken, making sure all pieces are covered.
  4. Sprinkle 1.5 cups of mozzarella cheese over the sauce, followed by 3/4 cup of parmesan cheese.
  5. In a small bowl, mix the panko breadcrumbs with the remaining 1/4 cup parmesan cheese and olive oil. Sprinkle this mixture evenly over the cheese layer.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden brown.
  7. Remove from oven and let rest for 5 minutes. Sprinkle with remaining 1/2 cup mozzarella cheese and fresh basil before serving.
