- Preheat your oven to 400°F (200°C). Lightly grease a 9x13 inch baking dish with cooking spray or olive oil.
- In a large bowl, season the chicken pieces with Italian seasoning, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
- Spread the seasoned chicken evenly in the prepared baking dish. Pour the marinara sauce over the chicken, making sure all pieces are covered.
- Sprinkle 1.5 cups of mozzarella cheese over the sauce, followed by 3/4 cup of parmesan cheese.
- In a small bowl, mix the panko breadcrumbs with the remaining 1/4 cup parmesan cheese and olive oil. Sprinkle this mixture evenly over the cheese layer.
- Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden brown.
- Remove from oven and let rest for 5 minutes. Sprinkle with remaining 1/2 cup mozzarella cheese and fresh basil before serving.
Notes
Make ahead: Assemble up to baking step and refrigerate for 24 hours. Freezes well for up to 3 months. Add vegetables like mushrooms or spinach between layers for customization.
