  • 8 slices of fresh white or whole wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon butter, softened (optional, for spreading on bread)

  1. In a small bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper. Stir until smooth and well combined.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber. Pat the slices dry with a paper towel to remove excess moisture if desired.
  3. Lay out the slices of bread on a clean surface. Lightly butter one side of each slice if desired. Spread a generous layer of the herbed cream cheese mixture onto the unbuttered side of each slice.
  4. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining slices of bread, cream cheese side down, to form sandwiches.
  5. Trim the crusts off the sandwiches for a classic tea sandwich look. Cut each sandwich into quarters or halves and serve immediately.

Notes

Choose soft, fresh bread like white or whole wheat. To prevent sogginess, assemble sandwiches just before serving. For extra flavor, add thinly sliced radishes or fresh mint to the cream cheese spread. Pair with a light and floral tea like Earl Grey or chamomile.
