- Start by preheating your oven to 325°F (165°C). Grease and flour two 8x4-inch loaf pans to prevent the bread from sticking.
- In a medium bowl, whisk together the flour, salt, baking soda, baking powder, and ground cinnamon. Set this mixture aside for later.
- In a large bowl, beat the eggs lightly. Add the vegetable oil, granulated sugar, and vanilla extract. Mix well until the sugar is fully dissolved and the mixture is smooth.
- Stir the grated zucchini into the wet mixture. Ensure it is evenly distributed. If you're using nuts, fold them into the mixture as well.
- Gradually add the dry ingredient mixture to the wet mixture, stirring just until combined. Be careful not to overmix, as this can result in a dense loaf.
- Pour the batter evenly into the prepared loaf pans. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pans for about 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve once cooled.
