- Cook pasta according to package directions in salted water while preparing salmon and sauce
- Heat olive oil in a large skillet over medium heat, season salmon with salt and pepper, and cook for 4-5 minutes per side until cooked through
- Remove salmon from skillet and set aside
- In the same skillet, add minced garlic and cook for 30 seconds until fragrant
- Pour in vegetable broth and lemon juice, scraping any browned bits from the bottom of the pan
- Reduce heat to low and stir in heavy cream
- Add Parmesan cheese gradually while stirring continuously until sauce thickens slightly
- Flake cooked salmon into bite-sized pieces and gently fold into the creamy sauce
- Drain cooked pasta and add to skillet, tossing to coat with sauce
- Garnish with fresh parsley and additional Parmesan if desired
Notes
Use fresh salmon for best texture/flavor; don't overcook salmon; substitute half-and-half for lighter sauce; add spinach or cherry tomatoes for variation
