  • 8 oz penne or fettuccine pasta
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup vegetable broth
  • 1 teaspoon lemon juice
  • 1/2 teaspoon dried dill
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
  1. Cook pasta according to package directions in salted water while preparing salmon and sauce
  2. Heat olive oil in a large skillet over medium heat, season salmon with salt and pepper, and cook for 4-5 minutes per side until cooked through
  3. Remove salmon from skillet and set aside
  4. In the same skillet, add minced garlic and cook for 30 seconds until fragrant
  5. Pour in vegetable broth and lemon juice, scraping any browned bits from the bottom of the pan
  6. Reduce heat to low and stir in heavy cream
  7. Add Parmesan cheese gradually while stirring continuously until sauce thickens slightly
  8. Flake cooked salmon into bite-sized pieces and gently fold into the creamy sauce
  9. Drain cooked pasta and add to skillet, tossing to coat with sauce
  10. Garnish with fresh parsley and additional Parmesan if desired

Notes

Use fresh salmon for best texture/flavor; don't overcook salmon; substitute half-and-half for lighter sauce; add spinach or cherry tomatoes for variation
