- Season the salmon fillets with Italian seasoning, salt, and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add salmon fillets skin-side up and cook for 4-5 minutes until golden brown. Flip and cook for another 2-3 minutes. Remove salmon from skillet and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
- Pour in vegetable broth and bring to a simmer, scraping any browned bits from the bottom of the pan.
- Reduce heat to medium-low and stir in heavy cream. Add Parmesan cheese and stir until smooth.
- Add fresh spinach and cook until wilted, about 2-3 minutes.
- Return salmon fillets to the skillet, spooning the creamy sauce over them. Simmer for 2-3 minutes to heat through.
- Garnish with fresh basil and serve immediately.
Notes
For the best results, pat your salmon fillets dry before seasoning to ensure a beautiful sear. Don't overcrowd the skillet - cook in batches if necessary. The sauce will thicken as it cools, so serve immediately for the perfect consistency.
