- Prepare the chicken breasts by pounding them to an even 1/2-inch thickness using a meat mallet or rolling pin. Season both sides with salt, pepper, garlic powder, and paprika.
- Set up your breading station with three shallow dishes. Place flour in the first, beaten eggs in the second, and mix breadcrumbs with Parmesan cheese in the third.
- Dredge each chicken breast in flour, shaking off excess. Dip in egg, then coat thoroughly with the breadcrumb mixture, pressing gently to adhere.
- Heat vegetable oil in a large skillet over medium-high heat. Fry chicken for 4-5 minutes per side until golden brown and cooked through. Transfer to a baking sheet.
- Top each chicken cutlet with 2 slices of turkey breast and 1 slice of Swiss cheese. Broil for 2-3 minutes until cheese is melted and bubbly.
- While chicken is broiling, whisk together all honey mustard sauce ingredients in a small bowl until smooth.
- Drizzle the honey mustard sauce over the finished chicken cutlets and serve immediately.
Notes
For the crispiest results, make sure your oil is properly heated before adding the chicken - it should sizzle immediately when you add a breadcrumb. You can bake the breaded chicken at 400°F for 20-25 minutes instead of frying for a lighter option.
