  • Salt and pepper to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

  1. In a large skillet, cook the ground beef over medium heat until browned. Add the diced onion and garlic, and sauté until softened. Stir in the mixed vegetables, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Simmer for 10-15 minutes until the mixture thickens.
  2. Preheat your oven to 375°F (190°C). Roll out the puff pastry and cut it into circles slightly larger than your ramekins or baking dishes. Spoon the beef filling into each ramekin, then place a puff pastry circle on top. Press the edges to seal and brush with the beaten egg for a golden finish.
  3. Place the ramekins on a baking sheet and bake for 20-25 minutes, or until the pastry is golden brown and puffed. Allow the pot pies to cool for a few minutes before serving.

Notes

For extra flavor, add a splash of grape juice or vegetable broth to the filling. Make ahead by assembling the pot pies and refrigerating them before baking. Customize the filling with your favorite herbs or spices, such as rosemary or paprika.
