  • 1 ½ cups long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

  1. Turn your Instant Pot to sauté mode. Add olive oil and sauté the diced onion until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  2. Season the chicken with salt, pepper, paprika, and thyme. Add the seasoned chicken to the Instant Pot and brown for 2-3 minutes per side.
  3. Rinse the rice under cold water until the water runs clear. Spread the rice evenly around the chicken in the pot.
  4. Pour in the chicken broth, making sure not to stir. Close the lid, set the valve to sealing, and pressure cook on high for 8 minutes.
  5. Allow for a natural pressure release for 10 minutes, then quick release any remaining pressure. Carefully open the lid and fluff the rice with a fork.
  6. Garnish with fresh parsley if desired, and serve immediately. The chicken should be tender and juicy, with perfectly cooked fluffy rice.

Notes

Use long-grain white rice for best results, allow natural pressure release for 10 minutes to prevent gummy rice, and brown chicken first for maximum flavor depth.
