- Turn your Instant Pot to sauté mode. Add olive oil and sauté the diced onion until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Season the chicken with salt, pepper, paprika, and thyme. Add the seasoned chicken to the Instant Pot and brown for 2-3 minutes per side.
- Rinse the rice under cold water until the water runs clear. Spread the rice evenly around the chicken in the pot.
- Pour in the chicken broth, making sure not to stir. Close the lid, set the valve to sealing, and pressure cook on high for 8 minutes.
- Allow for a natural pressure release for 10 minutes, then quick release any remaining pressure. Carefully open the lid and fluff the rice with a fork.
- Garnish with fresh parsley if desired, and serve immediately. The chicken should be tender and juicy, with perfectly cooked fluffy rice.
Notes
Use long-grain white rice for best results, allow natural pressure release for 10 minutes to prevent gummy rice, and brown chicken first for maximum flavor depth.
