Ingredients

Ingredients
  • 4 ripe peaches, halved and pitted
  • 8 oz burrata cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup balsamic glaze
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp honey
  • Salt and freshly ground black pepper to taste
  • Optional: 1/4 cup toasted pine nuts or sliced almonds

Method

Instructions
  1. Grill the Peaches: Preheat your grill or grill pan to medium-high heat. Brush the peach halves with olive oil and grill for 2-3 minutes on each side until they are slightly charred and tender. Remove from the grill and let them cool slightly.
  2. Prepare the Burrata: While the peaches are grilling, place the burrata cheese on a serving platter. Drizzle it with honey and a pinch of salt and pepper.
  3. Assemble the Salad: Once the peaches are grilled, slice them into wedges and arrange them around the burrata cheese on the platter. Scatter fresh basil leaves over the top.
  4. Drizzle with Balsamic Glaze: Drizzle the balsamic glaze over the peaches and burrata. If using, sprinkle toasted pine nuts or sliced almonds on top for added crunch.
  5. Serve Immediately: Enjoy the salad right away while the peaches are still warm and the burrata is creamy.

Notes

Choose ripe but firm peaches for the best flavor. Grill the peaches until tender with beautiful grill marks. Serve with crusty bread or bruschetta for a complete meal. You can grill the peaches ahead of time and store them in the refrigerator, but assemble the salad just before serving to keep the burrata fresh.
