  • 12 oz salmon fillets, skin removed
  • 8 oz linguine or fettuccine pasta
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

  1. Cook pasta according to package directions. Drain and set aside.
  2. Season salmon with salt and pepper. Heat 2 tablespoons butter in a large skillet over medium-high heat.
  3. Cook salmon for 4-5 minutes per side, or until cooked through. Remove from skillet and set aside.
  4. In the same skillet, add remaining butter and garlic. Cook for 1 minute, or until fragrant.
  5. Add chicken broth and lemon juice to the skillet. Bring to a simmer.
  6. Stir in heavy cream and Parmesan cheese. Cook for 2-3 minutes, until sauce thickens slightly.
  7. Add cooked pasta to the skillet and toss to coat in the sauce.
  8. Flake the cooked salmon into large chunks and gently fold into the pasta.
  9. Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, use the rendered fat from cooking the salmon in your sauce. Don't overcook the salmon - it will continue to cook slightly when added back to the hot pasta. If you prefer a creamier sauce, add an extra tablespoon of heavy cream.
