Ingredients

Ingredients
  • 4 ripe peaches, halved and pitted
  • 4 cups arugula
  • 1 ball burrata cheese
  • 1/4 cup fresh basil leaves
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Method

Instructions
  1. Preheat your grill or grill pan to medium-high heat. Brush the peach halves with olive oil and place them cut-side down on the grill. Cook for 2-3 minutes until char marks appear and the peaches soften slightly. Remove from the grill and set aside.
  2. In a small saucepan, combine the balsamic vinegar and honey. Simmer over low heat for 5-7 minutes until the mixture thickens slightly. Remove from heat and let it cool.
  3. In a large bowl, toss the arugula with a drizzle of olive oil, salt, and pepper. Arrange the arugula on a serving platter or individual plates. Top with the grilled peach halves, torn burrata cheese, and fresh basil leaves.
  4. Drizzle the balsamic glaze over the salad just before serving. Enjoy immediately while the peaches are still warm.

Notes

Choose ripe but firm peaches for grilling to prevent them from becoming too soft. For added crunch, sprinkle toasted nuts like almonds or pecans over the salad. If you don't have a grill, use a grill pan or broil the peaches in the oven for a similar effect.
