- Wash all fruits thoroughly. Hull and quarter the strawberries, cube the watermelon and pineapple, slice the kiwi, and prepare the mango. Combine all fruits in a large mixing bowl, being gentle to avoid bruising the delicate berries.
- In a small bowl, whisk together the fresh lime juice, honey, lime zest, and chopped mint until well combined. The honey should dissolve completely into the lime juice. Add a pinch of sea salt to balance the flavors.
- Pour the honey lime dressing over the prepared fruits and toss gently to coat. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
- Garnish with fresh mint leaves before serving. This salad is best enjoyed chilled.
