- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- Prepare the peach filling: In a small bowl, mix the diced peaches, brown sugar, cinnamon, and nutmeg. Set aside.
- Make the cupcake batter: In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined.
- Assemble the cupcakes: Fill each cupcake liner about halfway with the batter. Spoon a generous amount of the peach filling on top of the batter in each liner.
- Bake: Place the cupcake tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- Cool: Allow the cupcakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Use fresh peaches for the best flavor. Avoid overmixing the batter to prevent dense cupcakes. Optionally, add a crumble topping for extra texture. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
