- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the thawed puff pastry on a lightly floured surface. Transfer it to the prepared baking sheet and prick the surface all over with a fork to prevent it from puffing up too much.
- In a bowl, mix the ricotta cheese, grated Parmesan, egg, salt, and pepper until smooth. Spread this mixture evenly over the puff pastry, leaving a small border around the edges.
- Arrange the sliced heirloom tomatoes on top of the ricotta mixture. Drizzle with olive oil and sprinkle with minced garlic.
- Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the ricotta is set.
- Remove the tart from the oven and let it cool slightly. Garnish with chopped fresh basil before serving.
Notes
For extra flavor, brush the puff pastry with a little olive oil before adding the ricotta mixture. Use a variety of heirloom tomatoes for a colorful presentation. Serve the tart warm or at room temperature for the best texture.
