  • 8 oz pasta (penne or fettuccine work well)
  • 1/2 cup sun-dried tomatoes in oil, chopped
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions
  1. Cook pasta according to package directions until al dente, reserving 1/2 cup of pasta water before draining
  2. Heat olive oil in a large skillet over medium-high heat, season chicken with salt, pepper and Italian seasoning, then cook until golden brown and cooked through (6-8 minutes), remove from skillet and set aside
  3. In the same skillet, add chopped onion and cook until softened (3-4 minutes), then add minced garlic and cook for another minute until fragrant
  4. Stir in sun-dried tomatoes and red pepper flakes if using
  5. Pour in chicken broth and bring to a simmer, scraping up browned bits from pan bottom
  6. Reduce heat to medium, stir in heavy cream and simmer gently for 2-3 minutes until sauce begins to thicken
  7. Stir in grated Parmesan cheese until melted and smooth
  8. Add cooked pasta and chicken back to skillet, tossing everything together, adding reserved pasta water if sauce is too thick
  9. Garnish with fresh basil before serving
