- Cook pasta according to package directions until al dente, reserving 1/2 cup of pasta water before draining
- Heat olive oil in a large skillet over medium-high heat, season chicken with salt, pepper and Italian seasoning, then cook until golden brown and cooked through (6-8 minutes), remove from skillet and set aside
- In the same skillet, add chopped onion and cook until softened (3-4 minutes), then add minced garlic and cook for another minute until fragrant
- Stir in sun-dried tomatoes and red pepper flakes if using
- Pour in chicken broth and bring to a simmer, scraping up browned bits from pan bottom
- Reduce heat to medium, stir in heavy cream and simmer gently for 2-3 minutes until sauce begins to thicken
- Stir in grated Parmesan cheese until melted and smooth
- Add cooked pasta and chicken back to skillet, tossing everything together, adding reserved pasta water if sauce is too thick
- Garnish with fresh basil before serving
