- In a large bowl, toss the cubed beef with flour, salt, and black pepper until evenly coated.
- Heat olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides. Remove the beef from the pot and set it aside.
- In the same pot, add the chopped onion, minced garlic, sliced carrots, and diced potatoes. Cook until the vegetables begin to soften, about 5 minutes.
- Return the beef to the pot. Add beef broth, grape juice, tomato paste, thyme, and rosemary. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the beef is tender.
- Stir in the frozen peas and cook for an additional 5 minutes. Preheat your oven to 375°F (190°C).
- Transfer the beef stew mixture to a large baking dish. Roll out the puff pastry sheet and place it over the top of the dish. Trim any excess pastry and crimp the edges to seal. Brush the top with beaten egg for a golden finish.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and flaky.
Notes
Use fresh herbs for a more vibrant flavor. You can prepare the beef stew a day ahead and assemble the pot pie just before baking. Customize your veggies by adding mushrooms or celery for extra depth of flavor.
