- Place chicken, potatoes, carrots, onion, and garlic in your slow cooker.
- In a bowl, whisk together chicken broth, tomato paste, thyme, rosemary, salt, and pepper.
- Pour the broth mixture over the chicken and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- During the last 30 minutes of cooking, stir in the frozen peas.
- If you prefer a thicker stew, mix cornstarch with water to create a slurry and stir it into the stew during the last 30 minutes.
- Remove the chicken, shred it with two forks, and return it to the stew.

Notes
For extra flavor, brown the chicken in a skillet before adding to the slow cooker. This stew freezes beautifully and the flavors improve overnight. Serve with crusty bread or over rice for a complete meal.
