  • 2 tablespoons cornstarch (for thickening)
  • 2 tablespoons water (for slurry)

  1. Place chicken, potatoes, carrots, onion, and garlic in your slow cooker.
  2. In a bowl, whisk together chicken broth, tomato paste, thyme, rosemary, salt, and pepper.
  3. Pour the broth mixture over the chicken and vegetables in the slow cooker.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. During the last 30 minutes of cooking, stir in the frozen peas.
  6. If you prefer a thicker stew, mix cornstarch with water to create a slurry and stir it into the stew during the last 30 minutes.
  7. Remove the chicken, shred it with two forks, and return it to the stew.
  8. Serve hot and enjoy your comforting meal!

Notes
