  • 2 ripe mangoes, peeled and diced
  • 2 cups fresh strawberries, hulled and halved
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1 cup seedless grapes, halved
  • 1 kiwi, peeled and sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons fresh lime juice
  • 3 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract

  1. Prepare all the fruits by washing, peeling, and cutting them into bite-sized pieces. Place them in a large mixing bowl.
  2. In a small bowl, whisk together the lime juice, maple syrup, and vanilla extract until well combined.
  3. Pour the dressing over the fruit mixture and gently toss to coat all the pieces evenly.
  4. Add the chopped mint leaves and give the salad one final gentle toss.
  5. Refrigerate for at least 15 minutes to allow the flavors to meld together before serving.

Notes

For best results, choose fruits that are ripe but still firm to maintain texture. If making ahead, add dressing just before serving to keep fruits from becoming too soft. Dragon fruit adds beautiful color contrast and mild sweetness.
