  • 2 lbs beef stew meat, cubed
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup grape juice (as a substitute for red wine)
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup frozen peas
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

  1. Season the cubed beef with salt and pepper, then toss it with flour until evenly coated.
  2. Heat olive oil in a large pot over medium heat. Add the beef and cook until browned on all sides. Remove the beef and set it aside.
  3. In the same pot, sauté the diced onion, carrots, celery, and garlic until softened, about 5 minutes.
  4. Return the beef to the pot and add beef broth, grape juice, tomato paste, thyme, and rosemary. Stir well, bring to a boil, then reduce heat and simmer for 45 minutes or until the beef is tender.
  5. Stir in the frozen peas and cook for an additional 5 minutes. Remove from heat and let the filling cool slightly.
  6. Preheat the oven to 375°F (190°C). Transfer the beef filling to a deep pie dish or baking dish.
  7. Roll out the puff pastry sheet, place it over the filling, trim excess dough, crimp the edges, and cut small slits in the top. Brush with beaten egg.
  8. Bake for 25-30 minutes, or until the crust is golden brown and flaky. Let it cool for a few minutes before serving.

Notes

Use cold butter for a flakier crust if making your own pastry. Thicken the filling with cornstarch if it is too thin. Customize vegetables like mushrooms or potatoes for added flavor. The filling can be prepared a day in advance.
